Start by sautéing onions in olive oil until they're soft and translucent. Add in the minced garlic and spices, cooking until fragrant. This step is key for developing depth of flavor. Next, mix in the cooked and black beans and mash them with the onion and spice mixture.
Add a bit more oil to your skillet and heat it up. Place a tortilla in the pan, then scoop some of the black bean mixture onto one half. Add a sprinkle of vegan cheese (if you’re using some), then fold the tortilla over to create a half-moon shape.
Once the taco is folded, press down slightly to help the taco hold its shape. Cook it until the tortilla is golden and crispy on both sides. Continue this same process until the rest of the tacos are made.
