Breakfast Casserole

This easy breakfast casserole features cheese, hash browns, veggies, and an "egg" mixture. Enjoy it for breakfast, brunch, or meal prep!

Warm the oil in a medium-sized skillet, and sauté the onions and peppers until they're soft and fragrant.

STEP 1

Add the veggie ground. Cook the mixture for another few minutes, or until the veggie ground is fragrant and browned.

STEP 2

Stir in the spinach, and remove the skillet from the heat as soon as it has wilted. Season with salt and pepper.

STEP 3

Add all of the "egg" ingredients to a high-speed blender or food processor. Blend until the mixture is smooth.

STEP 4

Once the egg mixture is blended, add it to the skillet with the vegetables and veggie ground, stirring to combine.

STEP 5

Add the hash brown patties in a single layer at the bottom of a casserole dish, and sprinkle cheese on top.

STEP 6

Using a spatula, spread the egg mixture on top followed by extra cheese, cherry tomatoes, or green onions if you'd like.

STEP 7

Place the casserole dish in the oven, and bake at 350 degrees F for 55-60 minutes, or until the top has browned and the center is just set.
