Bring water, cane sugar, and lime juice to a simmer. Lime juice prevents sugar crystallization.
Add the peanuts and stir continuously until both the nuts and sugar are golden.
Add extra nuts, grains, seeds, or dried fruits (amaranth in this case).
Add the mixture to greased springform pans or a lined baking dish to set.
After about 5 minutes, slice or remove the candies from the springform pans.
Keep your Mexican peanut brittle stored in an airtight container at room temperature.
