Taco Recipe

Try this easy taco recipe filled with beans and potatoes, wrapped in corn tortillas, and steamed in hot chile oil. Don't forget some salsa verde!

Prepare the refried beans and chipotle mashed potato fillings.

STEP 1

Sauté the onions and garlic. Transfer them to a blender with rehydrated chiles, oil, and salt. Blend the salsa on high until no chunks remain.

STEP 2

Strain the salsa back into a pot and simmer over medium.

STEP 3

Line a basket or large stockpot with a towel, then a grocery or garbage bag, followed by a few sheets of butcher paper.

STEP 4

Heat each tortilla, then add a small scoop of beans or potatoes, fold the tortilla in half, and place it inside the prepared basket.

STEP 5

Top each layer with a handful of sliced onions and a drizzle of hot salsa. Add another layer of butcher paper on top and continue this process.

STEP 6

Close the bag and cover the basket or pot with another towel. Steam the tacos for 60 minutes before serving.
