Chips

Mix masa harina with salt and water to form dough (masa).

Make syrup

Dissolve piloncillo in water and simmer to form a syrup.

Blend masa

Blend the masa with more water to smooth it, then add it to the syrup.

Add lime

After the mixture has simmered, add in fresh lime.

Ferment

Let the mixture ferment in a clean, dry, and dark spot with a breathable cover over.

Thin it out

Mix the tejuino concentrate with ice to thin it out.

Serving

Add a squeeze of lime and salt, then mix the tejuino back and forth.

Toppings

Optional: Add a scoop of lime sorbet (nieve fe limón) on top.
