Chickpea Salad

This healthy chickpea salad features Mediterranean vegetables and a savory vinaigrette. It's quick, easy, and full of plant-based nutrients!

ABOUT

Add the olive oil, vinegar, garlic, salt, and pepper to a mason jar or bowl, then shake, whisk, or stir until they are well combined.

STEP 1

In a large mixing bowl, mix the chickpeas, cucumber, bell pepper, tomatoes, olives, cranberries, red onion, and parsley.

STEP 2

Pour half of the dressing over top, and give the salad a stir. Pour the remaining dressing on, and stir again.

STEP 3

Serve this chickpea salad with or without vegan feta on top.
