Toss the shiitake mushroom slices with tamari and olive oil, then bake them at 325 degrees F.
Simmer the tomatillos, jalapeños, and onions in a saucepan until tender.
Simmer the dehydrated jackfruit with garlic and a generous pinch of salt to rehydrate it.
Add the boiled vegetables with garlic, cilantro, salt, and Mexican oregano to a blender and mix until smooth.
Drain the jackfruit and sauté it for a few minutes to brown it and add some extra flavors.
Once the jackfruit is browning, add in the salsa verde and give it a stir. Add in the rest of the broth and simmer.
Serve your vegan carne en su jugo with shiitake mushroom bacon, radishes, cilantro, onion, lime wedges, etc.
