Oatmeal Raisin Cookies

These oatmeal raisin cookies are soft, chewy, and moist! Full of raisins, whole grains, and warming spices, they're the ultimate treat!

Soak the raisins. In the meantime, whisk the flour, oats, spices, salt, baking powder, and baking soda together in a large mixing bowl.

STEP 1

Beat the vegan butter, brown sugar, and coconut sugar until light and fluffy. Add the vanilla, then mix it for another 30-60 seconds.

STEP 2

Slowly add the dry ingredient mixture to the wet ingredients. Drain the raisins, then fold them into the batter.

STEP 3

Roll dough balls, and transfer them to the baking sheets. Slightly flatten each ball of cookie dough, then get them into the oven!
