Size matters


Cube the potatoes quite small to lessen the cook time and make them extra tender.

All about the onions


Add the onions before the other vegetables since they take longer.

Add your seasonings


Use extra spices and herbs like Mexican oregano, cumin, cayenne, paprika, etc. Or keep it simple with S&P!

Add tomatoes last


Since the tomatoes don't take very long to cook, add them last to avoid a soggy meal.

Don't forget sauce!


Serve your potatoes with salsa, vegan crema, and warm corn or flour tortillas.
