Blend the tomatoes, onions, garlic, chipotles, and some vegetable broth until it's smooth.

Put it together


Toast the elbow macaroni for more flavor, then add veggies, salsa, broth, and aromatics.

Add zucchini last


Since it doesn't take as long to cook as carrots or celery, add the squash last to prevent a mushy texture.

Serving suggestions


Serve your sopa de coditos as-is or with a squeeze of lime, vegan queso fresco, corn tortillas, or hot sauce.
