Toast the guajillo and arbol chiles to bring out their flavors. Careful not to burn them!

Make the salsa by boiling the tomatillos, onions, and chiles until they are tender.

Use blue, white, or yellow masa harina (pictured is blue). Mix it with warm water and salt to form dough.

Add the cooked vegetables and garlic to a blender and mix everything until smooth.

Mix nopalitos (cactus) together with fresh vegetables like onions, cilantro, tomatoes, etc.

Flatten a dough ball, then fill it with a scoop of beans. Fold it over like an empanada and pinch the ends. Flatten it into a tlacoyo shape.

Cook the tlacoyos for a few minutes on each side until it is firm and slightly charred.

Serve your tlacoyos with cactus salad, salsa, and vegan queso fresco on top for a delicious and healthy snack!
