Cranberry Orange Granola

Ingredients
 

Dry Ingredients

  • 4 cups rolled oats ($0.77)
  • ½ cup coconut shreds ($0.33)
  • 2 tbsp ground flaxseed ($0.08)
  • ½ tbsp cinnamon ($0.06)
  • ½ tsp sea salt ($0.01)

Wet Ingredients

  • ½ cup pitted dates, soaked ($0.52)
  • 3 tbsp coconut oil ($0.36)
  • ¼ cup + 1 tbsp maple syrup ($0.74)
  • 1 navel orange, juiced and zested ($0.89)
  • 2 tsp vanilla extract ($0.42)

Add-Ins

  • ¾ cup dried cranberries ($0.51)
  • cup almonds, roughly chopped ($0.33)

Instructions
 

  • Soak dates in a bowl overnight, or for at least 2 hours in boiling water.
  • Preheat your oven to 300°F, and line two baking pans with parchment paper.
  • Combine all dry ingredients in a large mixing bowl, leaving the cranberries out.
  • Drain dates, and add those plus the coconut oil, maple syrup, orange juice & zest, and vanilla extract into a food processor or high-speed blender.
  • Once you have a smooth consistency, combine almonds, dry and wet ingredients, but don't mix the cranberries in at this point.
  • Spread granola mixture evenly on your parchment-lined pans, and bake at 300°F for 25-30 minutes, stirring halfway. Once your granola is nice and golden brown, remove trays from the oven and mix in dried cranberries.
  • Serve with your favorite yogurt and berries! You can store this granola in an airtight container for up to 4 weeks in the pantry.

Notes

  • You can mix up the flavor combinations with ingredients you have at home. Some other options we love include chocolate orange, cinnamon raisin, or lemon blueberry!
