Ingredients
 

Filling

  • 6 small (~6 cups) Granny Smith apples (peeled and very thinly sliced or cubed into ¼-inch pieces)
  • 3 tablespoons all-purpose flour
  • ½ cup brown sugar (or coconut sugar)
  • 3 tablespoons vegan butter (melted)
  • ¾ teaspoon cinnamon
  • 1 ½ teaspoons vanilla extract

Topping

  • ¾ cup all-purpose flour
  • ¾ cup old-fashioned rolled oats
  • cup brown sugar
  • ¾ teaspoon cinnamon
  • ½ teaspoon nutmeg (or allspice)
  • ½ cup vegan butter (softened)
  • ¼ teaspoon salt

For serving

  • Dairy-free ice cream (salted caramel or vanilla)

Instructions
 

  • Preheat the oven to 350°F and lightly grease a 9x9 baking dish with vegan butter or cooking spray. Note: If you are making this recipe in a 9x13 baking dish, you’ll need about 1 ½ times more ingredients.
  • In a large mixing bowl, combine the thinly sliced apples with the flour, sugar, melted butter, cinnamon, and vanilla extract. Toss well until the apples are evenly coated with the mixture. Transfer everything to the prepared baking dish.
  • In another bowl, whisk together the flour, rolled oats, sugar, cinnamon, nutmeg, and salt. Add the vegan butter and work it into the dry ingredients using your fingers or a pastry blender until the mixture resembles coarse crumbs.
  • Evenly sprinkle the oat and flour mixture over the apples in the baking dish, ensuring that the apples are fully covered.
  • Place the dish in the preheated oven and bake for ~45 minutes, or until the top turns golden brown and the apple filling is bubbly and tender when tested with a fork.
  • Remove the apple crisp from the oven and allow it to cool for ~10 minutes. Serve warm with a scoop of vegan salted caramel or vanilla ice cream. Happy eating!
