Ingredients
 

  • ¼ cup balsamic vinegar ($0.20)
  • 2 tablespoons maple syrup ($0.30)
  • 3 tablespoons vegan mayonnaise ($0.36)
  • 1 tablespoon smooth Dijon mustard ($0.02)
  • 1 clove garlic, peeled ($0.04)
  • ½ teaspoon sea salt ($0.01)
  • ¼ teaspoon cracked black pepper ($0.01)
  • ¾ cup olive oil ($1.32)
  • ¼ - ½ cup water

Instructions
 

  • Add balsamic vinegar, maple syrup, mayonnaise, Dijon mustard, garlic, salt, and pepper to a blender. Mix on high until smooth, then lower the speed and slowly add the olive oil.
  • Taste and adjust measurements — balsamic vinegar for more punch, maple to balance the tang, or garlic for zestiness. We like to thin ours with some water, but this is optional.
  • Serve immediately or transfer to a glass storage container and chill a few hours before serving. Happy eating!

Notes

  • Adjust the consistency: Start slow with the mayo to achieve your desired consistency. You can make it as thick or thin as you'd like.
  • Taste as you go: Start with a 3:1 oil-to-vinegar ratio and work your way up from there. We prefer it slightly tangy, but it's ultimately up to you!
  • Let it chill: Although this dressing tastes delicious immediately, the flavors meld together more after it's had a chance to chill.
  • Double batch: Since this dressing stores so well, make a double or triple batch to keep on hand.
