Easy Maple Glazed Carrots

These maple glazed carrots are rich, tender, and perfectly caramelized! Roasted carrots are infused with the sweet and savory flavors of pure maple syrup, garlic, vegan butter, and thyme.

Ingredients
 

  • 2 pounds thin carrots
  • 1 ½ tablespoons vegan butter
  • 1 ½ tablespoons olive oil
  • 2 tablespoons maple syrup
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • Salt & cracked black pepper to taste

For serving optional

  • Fresh thyme
  • Flaky sea salt

Instructions
 

  • Preheat the oven to 400ºF and line a large baking pan with parchment paper.
  • Wash and scrub the carrots. If they’re small and thin, leave them whole. If they’re larger, half or even quarter them lengthwise. Add them to a large mixing bowl and set aside.
  • Melt the butter in a small saucepan over low heat. Once it’s melted, stir in the olive oil, maple syrup, thyme, garlic powder, and salt and pepper to taste.
  • Add this mixture to the bowl of carrots and stir together until the carrots are coated. Transfer the carrots to the prepared baking sheet, spreading into a single layer.
  • Roast the carrots, tossing halfway, for about 30-35 minutes until deeply caramelized and tender.
  • Serve immediately while hot with fresh thyme and flaky sea salt on top. Happy eating!

Notes

  • Carrot quality: Opt for fresh, organic carrots if possible. They generally have a sweeter and more vibrant flavor than their non-organic counterparts.
  • Even cuts: Make sure all the carrots are cut to roughly the same size for even cooking. If some are small, leave them whole. If others are large, slice them.
  • Single layer: Lay the carrots in a single layer on the baking tray to ensure even heat distribution. Use two baking trays if necessary.
  • Toss the carrots halfway: This will help evenly caramelize each side of the carrots.
  • Adjust the seasoning: Taste the glaze before mixing it with carrots and adjust it according to your preferences.
  • Fresh garnishes last: Always add fresh herbs or garnishes just before serving to preserve their vibrant colors and flavors.
  • Use real maple syrup: Authentic pure maple syrup, rather than maple-flavored pancake syrup, will give you the most ideal flavor.
