  • 2 pounds thin carrots
  • 1 ยฝ tablespoons vegan butter
  • 1 ยฝ tablespoons olive oil

  • Salt & cracked black pepper to taste

Instructions
 

  • Preheat the oven to 400ยบF and line a large baking pan with parchment paper.
  • Wash and scrub the carrots. If theyโ€™re small and thin, leave them whole. If theyโ€™re larger, half or even quarter them lengthwise. Add them to a large mixing bowl and set aside.
  • Melt the butter in a small saucepan over low heat. Once itโ€™s melted, stir in the olive oil, maple syrup, thyme, garlic powder, and salt and pepper to taste.
  • Add this mixture to the bowl of carrots and stir together until the carrots are coated. Transfer the carrots to the prepared baking sheet, spreading into a single layer.
  • Roast the carrots, tossing halfway, for about 30-35 minutes until deeply caramelized and tender.
