I’m Mitch, a food writer, photographer, and one of the founders of Broke Bank Vegan. I’m so glad you’re here! Here’s how it all started for me.

Hockey and nutrition
My introduction to the world of diet and nutrition began when I was on the ice. As a former semi-professional hockey player, the demands of the sport taught me the essential relationship between food, energy, and performance. I don’t play anymore, but this was the lens through which I discovered the importance of what we put into our bodies.
Healthcare and diet
After my time in sports, I transitioned into healthcare, working as a registered nurse in both the emergency department and cardiac surgery/medicine. This profession offered a new, invaluable perspective, and I started to truly understand the undeniable link between plant-based nutrition and overall health.
Whether assisting patients in the emergency room or the cardiac department, each experience reinforced my belief in the therapeutic power of plants. I became obsessed with learning from plant-based doctors like Michael Greger, Neal Barnard, Colin Campbell, and others.
Affordable vegan recipes
After making the switch to a vegan diet, I experienced so many positive benefits on my physical and mental well-being. However, a common complaint I heard was that vegan food is too expensive!
Since budgeting has always been a passion of mine, I made it my mission to prove these claims wrong. This is the inspiration behind creating Broke Bank Vegan in 2021 with Justine.
Here, I blend my medical background with my love for cooking, aiming to debunk the myth that veganism is an expensive lifestyle. I’m committed to sharing wholesome, delicious plant-based dishes that are affordable.

As a published food photographer and videographer, I have always loved capturing vibrant and drool-worthy photos and videos of food. My work has been featured on One Green Planet, The Beet, VegNews, and Vegan Food & Living.

Fun facts about me
- I love reading about neuroscience in my spare time and some of my favorite books are Memoirs of the Addicted Brain and The Brain That Changes Itself.
- I’m currently training to run my first marathon and hope to qualify for the Boston Marathon.
- I’m a PADI advanced open-water scuba diver and have dived in many places around the world including Mexico, the Philippines, and Cambodia.
