This recipe will fill your house with incredible autumn aromas, thanks to ground cinnamon and concentrated apple cider reduction (they give the donuts life)!

Instead of traditional fried donuts, we wanted to make these ones extra moist, tender, and cakey, so we opted to bake them (similar to our blueberry donuts). Not only is preparation easier, but cleanup is a breeze without hot oil splattered all over the place!

Once the donuts are baked, brush them with a coat of vegan butter and cover them with cinnamon sugar for the cherry on top *chefโ€™s kiss.* With a professional bakery-level taste, we wonโ€™t be surprised if this becomes your new fall-favorite recipe!

If itโ€™s unavailable, apple juice can be reduced, but you’ll miss out on some of the deeper flavors. Try reducing the apple juice with whole cinnamon, cloves, allspice, and nutmeg.
  • All-purpose flour: Gives the donuts structure while maintaining a tender texture. For a gluten-free option, use a 1:1 gluten-free flour blend, like from Bobโ€™s Red Mill.
  • Leavening agents: We use both baking powder and soda to give the donuts their rise. Ensure they’re fresh for the best results.
  • Cinnamon: Adds a warm, sweet, and subtly spicy note. You can also use apple pie spice or a mix of cinnamon, nutmeg, and cardamom.
  • Salt: Enhances all the sweet flavors. Stick with a fine-grained option.

Step 1: Reduce the apple cider

Before you start the donuts, youโ€™ll need to simmer the apple cider to reduce it by just over half. This trick intensifies the apple spice flavor, resulting in much more flavorful donuts (to create an even more intense flavor, make some apple cinnamon cider)!

It also reduces the liquid, meaning more flavor without an overly moist and mushy donut texture. For an even quicker prep time on the day of, reduce the apple cider the night before and let it cool in the fridge overnight.

Step 2: Mix the batter

Sift together the dry ingredients in a mixing bowl. Sifting helps aerate the mix, making for fluffier donuts. In another bowl, mix the cooled cider with the other wet ingredients.

Add the dry ingredients to the wet mix, but be gentle and avoid overmixing. This can lead to tough donuts, so stir just until combined.

Step 3: Pipe the batter

For uniform and neat donuts, we suggest using a piping bag or a freezer bag with the corner cut off. But if you’re in a pinch, you can use a spoon. Donโ€™t overfill the donut cavities โ€” half-full gives them room to expand.

Donuts

  • 1 ยผ cups apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ยพ teaspoon baking powder
  • 1 ยพ teaspoons cinnamon
  • ยฝ teaspoon salt
  • 2 tablespoons neutral vegetable oil
  • ยผ cup applesauce
  • ยฝ cup vegan buttermilk
  • ยผ cup light or dark brown sugar (packed)
  • ยผ cup cane sugar
  • 1 teaspoon vanilla extract

Coating

  • 2 tablespoons vegan butter (melted)
  • ยฝ cup granulated sugar
  • 1 ยฝ teaspoons ground cinnamon

Instructions
 

  • Add the apple cider to a small saucepan and bring it to a boil. Once boiling, lower the heat to a simmer until the liquid has reduced to ยฝ cup, about 15 minutes. Let the apple cider cool for ~10 minutes.
  • Preheat the oven to 350ยฐF and lightly grease a 6 donut pan with cooking spray or neutral vegetable oil.

Dry ingredients

  • In a medium mixing bowl, sift the flour, baking soda, baking powder, cinnamon, and salt. Set aside.

Wet ingredients

  • In another large mixing bowl, add the cooled apple cider, vegetable oil, applesauce, vegan buttermilk, brown sugar, cane sugar, and vanilla extract. Whisk until well combined.

Assembly

  • Transfer the dry ingredients to the bowl of wet ingredients, stirring until there are no more flour streaks left (be careful not to overmix).
  • Add the batter to a piping bag or a freezer bag with the corner cut off. Pipe the batter into the donut pan, only filling them about halfway.

Bake

  • Bake for 10-12 minutes, or until the edges and tops of the donuts have lightly browned and spring back when you gently push on them (ours only take 10 minutes).
  • Remove the donuts from the oven and let them cool for 5 minutes. Then, carefully invert the pan and remove the donuts onto a wire rack. Let them cool for another 5 minutes.
  • Re-grease the donut pan and repeat with the remaining batter (this recipe should make 12 donuts in total).

Coating

  • In the meantime, melt the vegan butter and add it to a small bowl and the cinnamon sugar mixture to a larger shallow bowl.
  • Lightly brush each donut with butter, then dip it into the bowl of cinnamon sugar and swirl it around until generously coated. Repeat with all the donuts, then enjoy immediately. Happy eating!
