  • Vegan chocolate chips: Use your favorite vegan brand. Costco dark chocolate chips are accidentally vegan, or you can go with Enjoy Life chips or chunks.
  • Flaky sea salt: To make these vegan chocolate chip pumpkin cookies feel extra gourmet. Maldon is our favorite brand, but you can use any coarse salt.

Gradually incorporate the dry mixture into the wet bowl. Remember, only mix the dough until just combined to keep your cookies tender!

Dry

  • 2 ยฝ cups all-purpose flour
  • ยพ teaspoon baking soda
  • ยฝ teaspoon baking powder

Wet

  • ยพ cup vegan butter (softened )
  • 1 ยผ cups light brown sugar (packed)

Instructions
 

  • Preheat the oven to 350ยฐF and line two baking sheets with parchment paper or a silicone baking mat.

Dough

  • Sift the flour, pumpkin pie spice, baking soda, baking powder, and salt into a mixing bowl. Set aside.
  • In a large mixing bowl, cream together the vegan butter and brown sugar with a stand mixer or hand mixer until light and airy. Add the vanilla and pumpkin purรฉe, then mix again until smooth.
  • Add the dry mixture to the bowl of wet ingredients and combine on low speed or by hand the dough just comes together.
  • Fold in the chocolate chips with a spatula until just combined. Be careful not to overmix the batter.

Bake

  • Scoop 1 ยฝ-2 tablespoons using a cookie scoop or a tablespoon, then spread them out evenly on the prepared baking sheet. Make sure to leave room between the dough balls as they will spread slightly as they bake.
  • Bake for 12-14 minutes, or until the edges are set and lightly browned. Remove them from the oven, gently bang the baking pan 1-2 times, and immediately sprinkle the tops with optional flaky sea salt.
